Vegetarian gastronomy in the urban space

Praca podejmuje tematykę wegetariańskich lokali gastronomicznych w przestrzeni miasta. Celem opracowania była próba identyfikacji uwarunkowań rozmieszczenia wegetariańskich obiektów gastronomicznych w przestrzeni Krakowa oraz poznanie uwarunkowań przestrzennych i pozaprzestrzennych korzystania z nich przez klientów tych lokali. Przeprowadzone w ramach badań dla potrzeb pracy badania terenowe oraz ankiety wśród użytkowników lokali wegetariańskich wskazały na rosnącą popularność i znaczenie wegetariańskich restauracji w Krakowie, które przyciągają zarówno lokalnych mieszkańców, jak i turystów. Posiadanie określonych preferencji kulinarnych, stosowanie diety wegetariańskiej czy towarzyszenie wegetarianom w trakcie posiłków odgrywały istotną rolę w wyborze wegetariańskiego lokalu gastronomicznego. Wegetariańskie lokale gastronomiczne znajdują się głównie w obszarach skupienia turystycznego, w bliskiej odległości od innych restauracji tego typu lub w pobliżu uniwersytetów, biurowców, terenów zielonych oraz sklepów z odzieżą z drugiej ręki.

The paper deals with the subject of vegetarian gastronomy in the urban space. The purpose of the study was an attempt to identify the determinants of the distribution of vegetarian catering facilities in the space of Krakow and to learn about the spatial and non-spatial determinants of their use by customers of these establishments. The field research conducted for the study and surveys of users of vegetarian establishments indicated the growing popularity and importance of vegetarian restaurants in Krakow, which attract both local residents and tourists. Having certain culinary preferences, following a vegetarian diet or accompanying vegetarians for meals played an important role in choosing a vegetarian eatery. Vegetarian eateries are mainly located in areas of tourist concentration, in close proximity to other restaurants of this type or near universities, office buildings, green spaces and second-hand clothing stores.
