Compendium ferculorum by Stanisław Czerniecki as a linguistic representation of the seventeenth-century culture of the noble table. Fasting in the Polish culinary tradition

Przedmiotem niniejszej pracy jest opis dawnej książki kucharskiej jako gatunku wypowiedzi na tle analiz kulturowych. Rozważania dotyczące realizacji gatunkowej zostały przeprowadzone na podstawie pochodzącego z 1682 r. zbioru przepisów - "Compendium ferculorum albo zebranie potraw" autorstwa Stanisława Czernieckiego. W oparciu o ten sam materiał dokonana została także próba scharakteryzowania XVII-wiecznej kultury stołu szlacheckiego. Aspekty kulturowe opisane zostały ze zwróceniem szczególnej uwagi na narracje dotyczące postu, który stanowił w przeszłości ważny czynnik identyfikacji religijnej i narodowej Polaków. Dokonane w pracy analizy ujęte zostały w dwa główne paradygmaty badań: komunikacyjny i kognitywno-kulturowy, i przeprowadzone zostały przy wykorzystaniu trzech podejść badawczych: lingwistycznej analizy dyskursu, genologii lingwistycznej oraz lingwistyki kulturowej.Przeprowadzone badania genologiczne pozwoliły określić podstawowe cechy gatunku, jakimi odznaczała się XVII-wieczna książka kucharska. Analiza objęła cztery poziomy: strukturalny (obejmujący cechy budowy), kognitywny (wątki tematyczne), stylistyczny (wartość stylistyczna) oraz pragmatyczny (sytuacja komunikacyjna i funkcje tekstu). Analiza przepisów postnych zawartych w "Compendium ferculorum" ukazała z kolei sposób, w jaki nakazy regulowane przez Kościół katolicki w Polsce były stosowane w praktyce.

The subject of this work is the description of the old cookbook as a genre of expression against the background of cultural analyzes. Considerations regarding the genre realisation were carried out on the basis of a collection of recipes from 1682 - "Compendium ferculorum or collecting dishes" by Stanisław Czerniecki. On the basis of the same material, an attempt was also made to characterize the seventeenth-century culture of the noble table. Cultural aspects have been described with particular attention to the narratives of fasting, which in the past constituted an important factor in the religious and national identification of Poles. The analyzes carried out in the work were divided into two main research paradigms: communication and cognitive-cultural, and were carried out with the use of three research approaches: linguistic discourse analysis, linguistic genology and cultural linguistics.The conducted genological research allowed to determine the basic features of the genre that characterized the 17th-century cookbook. The analysis covered four levels: structural (including structural features), cognitive (topic of utterance), stylistic (stylistic value) and pragmatic (communicative situation and text functions). The analysis of the fasting regulations contained in the "Compendium ferculorum" showed, in turn, the way in which the orders regulated by the Polish Catholic Church were applied in practice.
