dc.abstract.enThe aim of this study was to investigate the antioxidant properties of the Allium vegetables extracts in example of red onion and Brassica genus in red cabbage, using three different methods.UV-Vis spectrophotometer was used to determine the polyphenol content by Folin-Ciocalteu method, also the content of flavonoids and anthocyanins in given extracts were tested. By examining the content of anthocyanis a particular attention was taken of changes in the concentrations of these compunds in the extracts stored in three different locations, and the impact of storage time of the extract.Based on the obtained results, it was found that the thermal treatment affects unfavourably the composition of the vegetables. Cooking influences more negetive than using microvawe.The healthiest is to eat fresh and thermally not processed vegetables. It is recommended to store vegetables in the refrigerator, where low temperatures and lack of light let you keep the best possible antioxidant properties of the vegetables. It was found that red cabbage is a stronger antioxidant and has got more phenolic compounds than red onion.However, plants of the genus Allium, for example, red onion, have got more compounds from the group of flavonoids. It was noted that the vegetables with intense colors have definitely more antioxidants, so it is recommended to eat red onions instead of yellow, and white cabbage substitute with red. Plants rich in antioxidants can be used by humans as a natural antioxidants.pl
dc.abstract.plCelem pracy było zbadanie własności antyoksydacyjnych ekstraktów warzyw rodzaju Allium na przykładzie cebuli czerwonej oraz rodzaju Brassica z użyciem kapusty czerwonej poprzez zastosowanie trzech różnych metod. Zastosowano spektrofotometr UV-Vis w celu oznaczenia zawartości polifenoli metodą Folina- Ciocalteu, zbadano również zawartość flawonoidów oraz antocyjanów w podanych ekstraktach. Badając zawartość antocyjanów zwrócono szczególną uwagę na zmiany stężeń tych związków w ekstraktach przechowywanych w trzech różnych miejscach oraz wpływu czasu przechowywania ekstraktu. Opierając się na uzyskanych wynikach stwierdzono, że przetwarzanie poprzez obróbkę termiczną niekorzystnie wpływa na skład warzyw. Gotowanie wpływa bardziej negatywnie od mikrofalowania. Najzdrowsze jest spożywanie warzyw świeżych i nie przetwarzanych termicznie. Zalecane jest przechowywanie warzyw w lodówce, gdzie niska temperatura oraz brak dostępu światła pozwalają możliwie najlepiej zachować własności antyoksydacyjne warzyw. Stwierdzono, że kapusta czerwona jest silniejszym antyoksydantem oraz posiada więcej związków fenolowych niż cebula czerwona. Natomiast rośliny rodzaju Allium, na przykładzie cebuli czerwonej, posiadają więcej związków z grupy flawonoidów. Zauważono, że warzywa o intensywnych barwach posiadają zdecydowanie więcej przeciwutleniaczy, dlatego warto spożywać cebulę czerwoną zamiast żółtej, a kapustę białą zastępować czerwoną. Rośliny bogate w antyoksydanty mogą być wykorzystane przez człowieka jako naturalne przeciwutleniacze.pl

Celem pracy było zbadanie własności antyoksydacyjnych ekstraktów warzyw rodzaju Allium na przykładzie cebuli czerwonej oraz rodzaju Brassica z użyciem kapusty czerwonej poprzez zastosowanie trzech różnych metod. Zastosowano spektrofotometr UV-Vis w celu oznaczenia zawartości polifenoli metodą Folina- Ciocalteu, zbadano również zawartość flawonoidów oraz antocyjanów w podanych ekstraktach.
