Celem pracy jest analiza determinant funkcjonowania mikroprzedsiębiorstw w branży gastronomicznej. Rozprawa składa się z czterech rozdziałów. Część pierwsza prezentuje istotę sektora małych i średnich przedsiębiorstw w kraju. Rozdział drugi to rola i znaczenie branży gastronomicznej, a trzeci to specyfika tejże branży. Dla lepszego zobrazowania tematu w ostatnim rozdziale zaprezentowany został przykład mikroprzedsiębiorstwa w usługach gastronomicznych.
The aim of the thesis is to analyze the determinants of micro-enterprises in the catering industry. The dissertation consists four chapters. The first part presents the essence of the small and medium-sized enterprises in the country. The second chapter describes the role and importance of the foodservice industry, while the third chapter entails the specificity of that industry. To better illustrate the theme in the last chapter the example of micro-enterprises in the catering services will be used.
