"Quality management in a production enterprise on the example of an enterprise from the poultry sector"

Celem pracy jest weryfikacja stopnia wdrożenia zasad projakościowego zarządzania organizacją oraz spełnienia wymagań standardów zarządzania jakością i bezpieczeństwem żywności na przykładzie przedsiębiorstwa z sektora producentów mięsa drobiowego w Polsce. Dokonano identyfikacji przyczyn implementacji poszczególnych standardów jakości i bezpieczeństwa żywności w badanej organizacji. Dokonano oceny stopnia wdrożenia siedmiu zasad zarządzania jakością na podstawie samooceny. Ewaluacja stopnia spełnienia wymagań dwóch wybranych prywatnych standardów: IFS Food i BRC Global Standards Food Safety została dokonana na podstawie przeglądów dokumentacji i zapisów z audytów wewnętrznych przeprowadzonych w badanej organizacji oraz wywiadów uzupełniających z przedstawicielami najwyższego kierownictwa oraz pracownikami produkcyjnymi tej organizacji. Na podstawie wyników samooceny należy stwierdzić, że badana organizacja wdrożyła zasady zarządzania jakością na satysfakcjonującym poziomie. Wyniki oceny stopnia implementacji wymagań standardów jakości i bezpieczeństwa żywności IFS oraz BRC są na wysokim poziomie co świadczy o gotowości badanej organizacji do przeprowadzenia certyfikacji w zakresie tych dwóch standardów.

The aim of the work is to verify the degree of implementation of the principles of pro-quality organization management and compliance with the requirements of quality management and food safety standards on the example of an enterprise from the poultry meat producers sector in Poland. The reasons for the implementation of particular quality and food safety standards in the examined organization were identified. The degree of implementation of the seven principles of quality management was assessed on the basis of self-assessment. Evaluation of the degree of compliance with the requirements of two selected private standards: IFS Food and BRC Global Standards Food Safety was made on the basis of documentation reviews and records from internal audits carried out in the audited organization and supplementary interviews with representatives of the top management and production employees of this organization. Based on the results of the self-assessment, it should be stated that the audited organization implemented the principles of quality management at a satisfactory level. The results of the assessment of the degree of implementation of the requirements of the IFS and BRC food quality and safety standards are at a high level, which proves the readiness of the examined organization to carry out certification in the field of these two standards.
