Evaluate the effects of implementing a quality management system in a typical poultry farm

Celem niniejszej pracy jest przedstawienie wdrażania oraz efektów wynikających z wprowadzenia w typowej fermie drobiu brojlerów rzeźnych, Systemu Zarządzania Jakością opartego na normie ISO PN-EN 9001 – 2008.Realizacja celu wymaga udowodnienia hipotezy, że wdrożenie Systemu Zarządzania Jakością jest korzystne dla producenta brojlerów rzeźnych. Praca magisterska składa się z pięciu rozdziałów. W pierwszym rozdziale omówiono podstawowe zagadnienia związane z systemem zarządzania jakością, kompleksowe zarządzanie jakością (TQM) oraz system HACCP, który jest stosowany w podmiotach produkujących i sprzedających żywność. Drugi rozdział opisuje badaną fermę drobiu brojlerów rzeźnych, jej otoczenie zewnętrzne i wewnętrzne, strukturę oraz przedstawia sytuację finansową firmy. Rozdział trzeci przedstawia determinanty, jakie wpłynęły na decyzję o wdrożeniu Systemu Zarządzania Jakością oraz opisuje cały proces certyfikacji systemu, jak i gotowego wyrobu. Rozdział czwarty zawiera opis wdrażania Systemu Zarządzania Jakością oraz harmonogram prac. W rozdziale piątym autor przedstawił metody i techniki badawcze wykorzystane w pracy badawczej, harmonogram prac przy wdrażaniu Systemu Zarządzania Jakością oraz przebieg i analizę badań, której dokonano pod kątem generowanych kosztów oraz uzyskiwanych przychodów, jak i również korzyści dla pracowników i właścicieli fermy. Otrzymane wyniki potwierdziły postawioną hipotezę: wdrożenie Systemu Zarządzania Jakością jest korzystne dla producenta brojlerów rzeźnych.

The aim of this paper is to present the implementation and effects resulting from the introduction in the typical poultry farm of slaughter broilers, the Quality Management System based on ISO PN-EN 9001 - 2008 standard.The realization of the goal requires proving the hypothesis that implementation of the Quality Management System is beneficial to the producer of fattening broilers.The Master's thesis consists of five chapters. The first chapter discusses the key issues of the quality management system, the comprehensive quality management (TQM) and the HACCP system, which is used in food manufacturing and marketing. The second chapter describes the farm's poultry slaughterhouse surveyed, its external and internal environment, its structure and its financial situation. The third chapter presents the determinants that influenced the decision to implement the Quality Management System and describes the entire process of system certification as well as the finished product. The fourth chapter describes the implementation of the Quality Management System and the work schedule. In Chapter Five, the author presents the research methods and techniques used in the research work, the timetable for the implementation of the Quality Management System, and the mileageAnd analysis of the research that was made in terms of generated costs and revenues, as well as benefits for employees and owners of the farm.The results confirmed the hypothesis: implementation of the Quality Management System is beneficial to the producer of fattening broilers.
