W ciągu ostatnich kilkunastu lat znacznie wzrosło zainteresowanie dietami alternatywnymi, w tym dietą wegetariańską. Według szacunków z 2013 roku wegetarianie stanowili ok. 3,2% populacji Polski. Liczba ta stale rośnie, szczególnie wśród osób młodych. Praca ma na celu opisanie odmian diety wegetariańskiej, niesionych przez nią korzyści, zaleceń dotyczących bilansowania prawidłowego jadłospisu, a także przedstawienie wyników ankiety dotyczącej diety wegetariańskiej przeprowadzonej pośród 209 osób studiujących na krakowskich uczelniach w grudniu 2015 roku. Głównymi celami badania były: skonfrontowanie opinii studentów dotyczącej diety wegetariańskiej z częstotliwością jej stosowania, określenie najczęstszych motywów stosowania, bądź nie stosowania diety wegetariańskiej przez studentów, zidentyfikowanie najbardziej popularnej wśród studentów odmiany diety bezmięsnej oraz ocena zależności studiowana kierunków związanych z ochroną i promocją zdrowia z większą częstością stosowania diety wegetariańskiej w stosunku do studentów innych kierunków. Spośród wszystkich badanych 179 osób wyraziło pozytywną opinię na temat diety wegetariańskiej, a 137 studentów zadeklarowało stosowanie tego sposobu odżywiania. Większość ankietowanych stosowała dietę laktoowowegetariańską (N=78) i wegańską (N=55). Najczęstszym motywem przejścia na wegetarianizm były względy etyczne (N=127). Największa liczba nie-wegetarian za powód pozostania przy diecie tradycyjnej podała atrakcyjność walorów smakowych mięsa (N=42). Badanie wykazało, że tylko 21% wegetarian i 46% nie-wegetarian studiuje kierunek medyczny.

Over the past several years interest in alternative diets, including vegetarian diet, greatly increased. According to estimates from 2013 vegetarians accounted approximately 3.2% of the Polish population. This number is constantly growing, especially among young people. The thesis is to describe the varieties of vegetarian diet, carried by its benefits, recommendations for balancing the correct diet, as well as present the results of a survey on a vegetarian diet, conducted among 209 students studying at the universities of Krakow in December 2015. The main objectives of the study were: comparision students' opinions on a vegetarian diet with the frequency of its use, defining most common motives of use, or not use a vegetarian diet by students, identifying the most popular types of meatless diet among students and appraisement the relationship between fields concentrated on protection and promotion of health and more frequent use of a vegetarian diet compared to students in other fields. Among all surveyed 179 people have expressed a positive opinion on a vegetarian diet and 137 students have declared the following this diet. Most of the respondents applied the lactoowovegetarian diet (N = 78) and vegan diet (N = 55). The most common motive for the transition to vegetarianism were ethical considerations (N = 127). The largest number of non-vegetarians as a reason to stay on the conventional diet recognized attractiveness of meat taste (N = 42). The survey found that only 21% of vegetarians and 46% non-vegetarians are studying medical fields.
