dc.abstract.en The theme of the master work is "Implementation of HACCP system on the example of agro-horticultural farm." The work consists of four chapters, two theoretical and two empirical. The first chapter provides an overview of literature in the field of quality management, ISO systems and the philosophy of TQM. The second chapter is a review of the literature in the field of food safety, good hygiene practices, good manufacturing practice and describes the theoretical assumptions and requirements of the HACCP system. The third chapter is a description of the test farm and it also includes a brief section devoted to the production of mushrooms. The fourth chapter provides a description of the implementation of the HACCP system to test the farm together with assessment of the implementation and operation of the HACCP system. As a result of the implementation of the HACCP system is complete documentation attached to this master work. pl
dc.abstract.other Tematem pracy jest „Wdrożenie systemu HACCP na przykładzie gospodarstwa rolno ogrodniczego”. Praca składa się z czterech rozdziałów, dwóch teoretycznych i dwóch empirycznych. Pierwszy rozdział stanowi przegląd literatury w zakresie zarządzania jakością, systemów ISO oraz filozofii TQM. Drugi rozdział stanowi przegląd literatury w zakresie bezpieczeństwa produkcji żywności, dobrych praktyk higienicznych, dobrych praktyk produkcyjnych oraz opisuje teoretyczne założenia i wymagania systemu HACCP. Rozdział trzeci jest opisem badanego gospodarstwa, zawiera również krótki podrozdział poświęcony produkcji pieczarek. Rozdział czwarty stanowi opis wdrażania systemu HACCP do badanego gospodarstwa wraz z oceną wdrożenia i działania systemu HACCP. W wyniku wdrożenia Systemu HACCP powstała kompletna dokumentacja stanowiąca załącznik do niniejszej pracy magisterskiej. pl
